Hi Brad, chocolate bitterness varies greatly between brands, perhaps the one you used isn&#039;t agreeable to you. 1/4 tsp vanilla extract is about 10 drops, so that&#039;s fine. Stevia is usually the culprit. The one I used when I was testing this recipe (as per link supplied) was super sweet with no bitter after taste whatsoever, but sadly it is no longer available. I wasn&#039;t sure how much 10 drops of vanilla extract was (no dropper), so I used 1/4 tsp.  It also seemed like 1 tsp of stevia wasn&#039;t doing the trick, so I added some erythritol which helped a little.  I weighed out all the ingredients, so I&#039;m not sure why mine turned out unpleasant.  Any pointers?]]></description>
