ALMOND BON-BONS. Lovely and crunchy, these little bite-size delights go perfectly well with Coffee Panna Cotta and Chocolate Mousse.

  1. pre-heat oven to 160C fan (180C static).
  2. mix melted butter, fine almond flour and lupin flour.
  3. whisk egg white until it starts to thicken, then add icing 'sugar' and vanilla extract and whisk until stiff peaks form.
  4. combine the two mixes and take small amounts to form 24 little bon bons (about 2cm diameter).
  5. place bon bons on an oven tray lined with parchment paper, flattening half of them to make really thin circles (about 2mm thick).
  6. bake 8-10 mins until golden.
  7. let thins/bon bons cool down completely before removing from tray.
Notes
If you have a peanut allergy, you may be wise to avoid lupin. I would recommend replacing lupin flour with almond flour weight for weight.
